Easy and Yummy Breakfast

This is something I have for breakfast a couple times of week. It's very filling (helps to eat slowly vs. scarfing) and Drew and Aubrey like it too.

Allow me to present, spiderman plate and all: Sausage, Egg and Cheese on an English Muffin!


Here's what you need:
  • 1/4 cup Egg Beaters (1 pt)
  • 1 Morning Star Sausage Patty (2 pt) (I am going to price these out at Costco this weekend)
  • 1/8 cup shredded fat free cheese (.5 pt) or 1 slice of reduced fat cheese (1 pt. but double check yours to make sure it's the same!)
  • 1 Western Bagel, The Alternative English Muffin (1 pt) (at my walmart these are in the refrigerated cream cheese area.. a little over $2 for 6 of them)

To Prepare:

Spray your pan with Pam and pour egg beaters in and start cooking

Put the Sausage patty on a plate and microwave for 30-40 seconds, flip, microwave 10 seconds more.

While the nukin' is going on, put the English Muffin in the toaster.

Don't forget to season your eggs and stir them around while all of the above is going on.

To Assemble
:

Put your English Muffin on your plate and if you want, you can do a few squirts of I can't believe it's not butter Spray (0 pts).

Then in no particular order, place the sausage and eggs on and put the cheese on. If it's not melted enough, you could put it in the microwave for 10 seconds.

Your fantastic breakfast has a total of 4.5 to 5 points.

Having a filling breakfast has really helped me to stay full during the morning and not be snacky. Sometimes I have a piece of fruit but usually I wait and have a smoothie later in the day to get my fruit in.

And here's a quick hint.. the English Muffins are good toasted with a laughing cow cheese spread on it.. yummy 2pt snack!!

Or if you spread 1 TBS of reduced fat Peanut Butter on it, it's a 3pt snack!!

Weigh In #3

So this past week has been interesting. I've been weighing myself daily (WW advises once per week) and have watched it go up and down.. I know some fluctuation occurs just from the fact on if I've nursed Kaitlyn yet that morning let alone whatever else.

Anyway, so today is my official weigh in day and I lost: 1.5 for a grand total of 9.5lbs.

Little disappointed it wasn't more.. but what do you do.

I know my problem areas.. same as last week. Need to drink more water.. make sure I eat ALL of my points.. and exercise more.

I think I might even try waking up early to exercise this week. Which might kill me. Or make me totally and completely brain dead. Unless Kaitlyn decides to sleep all night.. then I might survive. Maybe. Still deciding.

The grand total of almost 10 pounds is just awesome though.. I can definitley tell it in my clothes. So that makes me very happy.

What I have found interesting this past week is looking at how I used to eat. For example, this past Saturday we went out for lunch for my Mother-in-law's birthday to a Chinese restaurant. I normally would have ordered fried rice, Orange Chicken (or something similar) and had a spring roll and a cream cheese wonton or two. I calculated that the rice and chicken alone were aprox. 24 points. My sister who is doing WW only gets 20 for the entire day!!

So instead I ordered the Chicken and Broccoli and steamed rice which I guessed to be around 12 (think that might be higher than it actually is- the rice alone was 6 points). I didn't eat the egg drop soup or the eggroll. I did have a little bite of the Cream Cheese wonton because Drew has been talking for WEEKS about how amazing they are.. but I broke it in half and just ate the bottom cream cheese part. And it was as fantastic as he said it was. LOL

And that is something else I love about WW.. I can eat whatever I want! Just have to take the point factor into account.. very nice.

Ok, that's all I have for now. lol

I'll post something I enjoy having for breakfast in a little bit and hopefully I can get my sister to post something this week. She said last week's meeting was lame-o (my words) and at the end of last week I lost my phone for a couple of days so I didn't have a way to talk to her anyway.

Top 5

These are (currently) my Top 5 favorite things.. taste great and LOW POINTS!

1. Light Laughing Cow Cheese
1 triangle = 1 point
$8 plus change at Costco for four packages.. and they don't expire for a long time!

I use this in place of cream cheese or on my turkey/chicken wraps instead of mayo. Can also be used to make a YUMMY Alfredo type sauce. Love It!

2. Sarah Lee 45 Calories Light & Delightful Wheat Bread
2 slices = 1 point
$4+ at Costco for two loaves

2 slices of bread for one point.. does it get better than this?? My kids love it too.

3. Roasted Broccoli
Total points is 7.. two servings is counted (by WW) as 3 points or 3 servings is 2 points.

Take 4-6 cloves of garlic and mince them (I use the pre-minced stuff in a jar) and combine with 4 tsp (or 1 TBS & 1 Tsp) olive oil. Cut up 1 pound of broccoli and toss it in with the garlic/oil mixture. Spray a 9x13 pan with pam and then dump the broccoli in. Sprinkle with a little kosher salt and pepper. Cook at 450 for 25-35 min (depending how dark you like it).

We have had this MANY times in the past two weeks and I just can't get enough. *drool*

4. Baked Lays, KC Masterpiece BBQ flavor
Aprox. 11 chips = 2 points

Oh, how I heart these.

I also really, really like Light & Fat Free Pringles in Barbacue flavor.
14 pringles = 1 point

5. Light Flat Out Wraps

1 wrap = 1 point (in the light variety)
$2.50 at Walmart.. they are up by the deli at most stores, not by the bread/tortillas

These aren't too bad.. do have a different texture than normal tortilla.. but it's not bad. Keep them in your fridge and they last longer.

I use these for everything.

Breakfast: smear a L.C. cheese on it, prepared egg beaters and light turkey bacon..
Lunch: smear a L.C. Cheese, line of mustard and add turkey, romaine/spinach, tomatoes sprinkel of the W.W. Mozerella (cause everything is better with cheese)
Dinner: chicken snack wrap.. smear a L.C. cheese on it, two cooked chicken tenders and same toppings as lunch..

You can pop it in the microwave for 10 seconds to warm it up a bit too after it's prepared.

Weigh In #2

So, today was my second weigh in.

I lost.. drumroll.. almost 3 pounds!! That's 8 pounds total. :o)

Things I enjoy:
-There is no counting calories/fat.
-There are LOTS of food that I can enjoy.. and I do.
-I'm getting the hang of how many points things are without constantly looking them up.
-I have more energy and am feeling.. more happy.. not sure what else to call it.

Victories:
-On early day I bought pizza and breadsticks for the kids and their three friends (that I was watching) and I didn't eat any of it. At all.
-Went out to Famous Dave's with friends during the week and researched before hand of what I could eat.. made it simple to order and also what to avoid.
example: My grilled chicken sandwich (including the bun) was 10 points and mashed potato side was 2 points. Just ONE of the cornbread muffins (which are FAB and I always eat) is NINE! :-O
Who knew.
-As a family, we are eating much healthier (well, except Hayden but he doesn't eat much of anything anyway, lol).
-I have been taking a GNC Women's super duper vitamin every day (two of them) and did you know that if you have excess B2 (riboflavin) that your pee turns bright yellow? I didn't.
-Had a Scentsy party on Saturday and almost all of it was WW friendly.. and if it wasn't (Reese's PB Cups, Cin. hearts- did you know four of those are 3 points??) I didn't eat it.

Downfalls:
-Not drinking enough water
-EXERCISE! I did walk Hayden to school when I was able to (not to cold for other kids) and overall I've been up and moving more.. but I need to get my butt in gear!
-Not eating all of my points. I get 5 more points than a "normal" girl because I'm nursing Kait.. it's SO MUCH FOOD! I swear I'm eating all of the time. And this week my appetite has decreased quite a bit. So I"m not sure what to do.. I don't want to eat a bunch of junk food to get the points in.. but not sure how else to do it?? Anyone??

Goals:
-Drink more water
-Exercise
-Figure out that point problem
-Share foods I enjoy on here
-Get my sister to become a poster on here and share her WW meeting info

The beginning.

I have created this blog because I am currently using Weight Watchers to lose weight via their online program. I want this to be a an interactive blog where others who are using Weight Watchers can come for ideas and encouragement.. and I can get that from you as well (please??). Or just to whine on those days.. because everyone has them.

Now that I have that out of the away..

My Thoughts on WW:

I have been using WW for one week and am very excited about their program and just how simple it is to use! You can easily find out each food item's point worth and then you plug it in your Daily Tracker. It tracks what you've used and what's left.. plus there are extra weekly points (and also if you exercise). You can also creat a meal or recipe and it gives you the total points.. put in the serving amount and then it shows the individual points! Just one click to add it to your tracker. It's perfect for my non existent memory. :o)

I have also found several items that I really enjoy eating that are pretty low in points.. I swear I'm eating all*day*long. And who doesn't enjoy that??

And even better.. it's working!

In one week I have lost... drumroll please...

5.2 pounds!! WOO HOO!!

I have to say that's one benefit of starting out chunky.. you lose more in the beginning. ;o)

I can't hardly wait to eat my way to success.
