Weigh In #7

So.. after dealing with fresh Sour Dough bread (YUM!), a dinner at Wingers w/ no nutritional information available, a 14 point WAFFLE (who knew??) and a couple days of being super snacky... I'm pleased to announce I lost 3.8 pounds!! YAY!

That's 18.2 total. :-D

And I brought out the ol' measuring tape and I've lost 3" off of my waist and 3" off of my rear end. Who doesn't love that!!

Late weight in and INTERVENTION!

Just thought I'd hurry and post about this past week's weigh in.. I actually lost nothing. Nada. Zip. Zero.

Ok, during the week I lost some.. but it was because I was SICK and about to kill over. I only got out of bed to feed my kids and change diapers. It was AWFUL! I was finally feeling better last Friday and then there was Valentines.. I didn't go crazy or anything but I did have to use some of the extra bonus points.

So I'm gung-ho about this week and losing weight.. and now I'm in need of an Intervention.

Seriously.

My awesome friend Marci was in San Fran. yesterday and brought me back.. an entire LOAF (round) of sour dough bread. SOUR DOUGH BREAD! I secretly have a love obsession with sour dough bread and this is the real stuff!

I've already had 3 pieces.. which translates into NINE points which is 1/3 of my daily points. :-S I even considered not eating dinner tonight so I could eat 3 more pieces. But I didn't. I really wanted to though.

I might have to plan my breakfast and lunch around massive amounts of low point fruits/veggies so that I can eat several more pieces of bread.

Or maybe I could work out for like five hours so I could eat the rest of the loaf???

Hmm... will have to look into my options.

What I DIDN'T eat.

Yesterday was PTA days at Harmon's.. each store chooses five elementary schools to participate and then they donate 5% of that days sales to the schools. They also provide 'carnival' type activities for the kids and the PTA runs them.

Anyway, as I'm the Treasurer, I had a shift from 1-3. When I got there I was told they also provided food for us (how nice is that!!). Of course I was hungry. I went into the room to see FOOD. And not just boring food but YUMMY FOOD.

As I headed to the table which contained glorious mounds of delicious rolls, lunch meat and cheeses galore, I had already decided my game plan.

I had one sandwich (several people had a few of them) which consisted of a roll (3pt), turkey (I'm guessing was 1pt) and I did have a piece of cheese (3pt) because I knew I wasn't going to indulge in other items. At the back of the table was an ignored condiment.. I grabbed it and the heavens parted and light showered down as saw that it was a bottle of honey mustard stuff (read: 1 TBS was 10 calories, zero fat). Take that you big bottles of Mayo that called to me! Ha!

I eyed all 15 different kinds of chips. Seriously.. there was TONS! After surveying my options, the winner was the tortilla chips after discreetly (sp?) checking out the nutrition label. I picked out the serving amount of 8 chips (3pts).

I then headed back to the "side dish" area where there was large containers of potato salad and macaroni salad.. fresh from the Deli. Mmm. But again I reached passed them and for the small container of fresh salsa that I had noticed earlier. Cha-ching! I loaded my plate up.

And what would you know.. but my plate was full. Which was a good thing because the dessert area was drool worthy. Have any of you ever purchased baked items from Harmon's? I don't very often because $4 for 8 cookies or some brownies is a lot in my book.. but when I do, they are just WONDERFUL! Well, lovely Harmon's had TWO HUGE trays of different kinds of brownies out. But again.. I had no room. I also figured if I still wanted one after I was finished that the option would still be there. Not like they were going anywhere! And I DID have that piece of cheese.

I enjoyed my wonderful lunch.. I broke each chip into two pieces and loaded it up with salsa. I ate slowly. When I was finished, I was totally full.. and no longer had the desire to even consider a brownie.

And that's what I didn't eat.

Apple Streusel

As I mentioned previously, this is a dessert I made twice last week. It's a large portion and only 3 points.. and it's really pretty easy to make. And everyone seemed to like it! (ok, some of the kids didn't.. but the adults did)


Apple Streusel
6 apples (I left the skin on)
2/3 cup unpacked brown sugar
3/4 tsp. cinnamon
3 tbsp. lemon juice
1/3 cup all purpose flour
1/3 cup uncooked old fashioned oats
4 1/2 tbsp. reduced calorie margerine

Directions:
  • Preheat oven to 350°F and spray 9x13 baking dish with Pam.
  • Stir together apples, 1/3 cup of brown sugar, cinnamon and lemon juice; pour into baking dish.
  • Cut flour, oatmeal, remaining brown sugar and margarine together with a pastry blender or fork in a medium bowl; sprinkle over apple mixture.
  • Bake until apples are tender and top is browned, about 45 minutes.
I figured that if you did this as 8 servings (so it's a good sized) that it's 3 points. You can also reduce the recipe by 1/3 if you don't need as much.

When we ate this the first time, everyone had scoops of vanilla ice cream (they are not on WW).

When Drew had strep throat a few weekends ago I had purchased some of those little cups of ice cream that you eat with the wooden 'spoons' that come with it.. well each of those is 2pts. So I plopped one of those on my plate and enjoyed mine just as much as they enjoyed theirs.

Weigh In #5

This past week has been a good one.. I met my first goal! Yay!

I lost 2.4 pounds for a total of 14.4. Woo hoo!

I've had a lot of help from family and friends too.. this week I went to my in-laws house for my sister-in-law's birthday dinner and my MIL was nice enough to let me know ahead of time what we were eating. I was then able to figure out the points and then plan my day in advance to allow for it. I had one Taco.. the tortilla was 3pt, the meat was 3pt for a 1/4 cup and then I guessed 3-4 pt for 1 TBS of the guac/reduced fat sour cream mixture.. skipped additional sour cream and shredded cheese). And I skipped the birthday cake.. which I wasn't really hungry for any way.

The next day I went to my sister's house for a few hours to just hang out.. we took the kids to The Red Barn (if you've been to Santaquin then you prob. know what I'm talking about). Anyway they have AWESOME ice cream. FANTASTIC. Instead of ordering my own I waited until Carson was finished eating his and had a few little bites and then gave the rest to Kaitlyn. And then we went back to my sister's house and had a WW friendly snack. Didn't feel deprived at all!

Let's see.. as for my goals, I didn't end up trying a new chicken recipe.

BUT.. I did cook salmon! The salmon from Costco is aprox. 3pt for 3.5 ounces (3 ounces is the same size as a deck of cards). I first sprayed tin foil with pam and then put the big salmon filet thing on it (there was two in the package). Each of them were covered with light butter spread stuff I have.. two TBS. on each one (2pts). One had lemon pepper and lemon juice put on it and the other one I put 1 1/2 TBS Brown Sugar on (1 TBS is 1 pt). Some time I intent to remember to buy real maple syrup to put on it.. mmm. Then I folded the tin foil over but made it puffed up so it could steam well. Drew threw them on the grill.. and the rule for that is 10 min. for each inch of thickness.. so about 15 minutes later we had awesome salmon. I had a serving of each kind.

I'm rambling enough now.. I'll do a separate post about a yummy dessert I made (twice).

Weigh In #4

Today was an awesome weigh in... I'm down t 2.8 pounds!!

That's 12 pounds total! YAY! I can definitely tell in the way that my clothes fit. Always a nice thing.

And that was even with the Superbowl yesterday.. we went over to a friend's house. I was a little worried about what I would eat. But we brought the sandwich tray so I decided I would only be slightly embarrassed and bring my own sandwich.

I also brought Stuffed Mushrooms and they were Fabulous! This year I used reduced fat sausage and reduced fat cream cheese and made enough of them w/ the mixture that each one was only 1 pt! *TOTALLY WORTH 1 POINT EACH*

I still need to do better at drinking more water and exercising more.. but I'm tired of those as goals so I'm coming up with different ones.

This week I am going to:
-Figure out a new way to prepare chicken (other than Drew grilling it)
-Try making a WW dessert (any ideas??)
-Figure out a way to prepare my vegetables in a different way (we pretty much roast everything right now)
